Texas Tommy, Wisconsin Willy & South Side Salvatore

So your wondering.... What?
No it is not a title for a movie about 3 guys traveling cross country eating bacon and drinking beer....
We will save that for later.

Welcome to my first recipe post.
It all started with a friend and myself talking about Bacon dishes we had as children.
My mom use to take hot dogs, cut a slit down them, stuff that with cheese, wrap it in Bacon
put it in the bun and then into the oven for 20 min.  So as a kid Hot dogs are fantastic but wrapped in Bacon we were living the good life.
My friend replies " Oh those are Texas Tommy's"
My answer "That's a way better name than Hot dogs with cheese wrapped in Bacon"
And so the birth of the Texas Tommy.  But, I as i begin to think ... I can do better than hot dogs...

Wisconsin Willy
Cook up some Brats with Onions & Beer
If using Thick Cut Bacon, cook it a bit to get if past raw.
If regular no need to pre-cook the Bacon
While waiting for the Brats to cool after cooking
Take the Brat Buns and spread Garlic Spread / Butter on both sides.
Then cut a slit down the Brat and insert the Cheese.
Wrap with Bacon, stuff that in the Bun.
Top with the grilled Onions. Put them in a pan or cookie sheet in a 350degree oven for 20 min
Then top with more cheese and back in for 2 or 3 min for the cheese to melt.
Enjoy the Bacony Goodness.


South Side Salvatore
Pretty much the same only you are going to use...
Italian sausage, Provalone, Motzzerrella, Fontinia or Italian cheese of choice.
No Onions, but use more Garlic.
And Roasted Red Pepper
And a nice Italian roll.


This only the begining.  What combos do you have????
