So your wondering.... What?
No it is not a title for a movie about 3 guys traveling cross country eating bacon and drinking beer....
We will save that for later.

Welcome to my first recipe post.
It all started with a friend and myself talking about Bacon dishes we had as children.
My mom use to take hot dogs, cut a slit down them, stuff that with cheese, wrap it in Bacon
put it in the bun and then into the oven for 20 min.  So as a kid Hot dogs are fantastic but wrapped in Bacon we were living the good life.
My friend replies " Oh those are Texas Tommy's"
My answer "That's a way better name than Hot dogs with cheese wrapped in Bacon"
And so the birth of the Texas Tommy.  But, I as i begin to think ... I can do better than hot dogs...

Wisconsin Willy
Cook up some Brats with Onions & Beer
If using Thick Cut Bacon, cook it a bit to get if past raw.
If regular no need to pre-cook the Bacon
While waiting for the Brats to cool after cooking
Take the Brat Buns and spread Garlic Spread / Butter on both sides.
Then cut a slit down the Brat and insert the Cheese.
Wrap with Bacon, stuff that in the Bun.
Top with the grilled Onions. Put them in a pan or cookie sheet in a 350degree oven for 20 min
Then top with more cheese and back in for 2 or 3 min for the cheese to melt.
Enjoy the Bacony Goodness.


South Side Salvatore
Pretty much the same only you are going to use...
Italian sausage, Provalone, Motzzerrella, Fontinia or Italian cheese of choice.
No Onions, but use more Garlic.
And Roasted Red Pepper
And a nice Italian roll.

The first was by Nathaniel Bacon in 1676 of Virginia, part of the British colonies.
Also know as the Bacon Rebellion, it predated the Declaration of Independence by 100 years. It focused on high taxes, restraint of trade & security..
Sadly, it led to an Indian massacre, The recall of the appointed Governor & Mr Nathaniel Bacon's death.

This Bacon Manifesto will be significantly less political.
It will focus on the power of Bacon for Good.
Its impact on society, fun stuff,
And of course delicious Bacon recipes.

Good Morning Mr Bacon

Ok, so no matter if your tired, hungover or just grinding out another day.
Bacon starts you day in a great way.
Frying up slices, the smell permeates the house and your senses.
Getting you ready for the day letting you know its going to be a good day.
Then tossing the potatoes in the bacon grease to cook letting the Bacony Goodness coat
and adsorb ....mmmmm  followed by  a couple of eggs
Delicious , there is nothing you can't do after a meal with Bacon.
You have just eaten the greatest meat in the universe.
You are awesome.  That is what Bacon does for you.
Bacon makes you Awesome.
Frankly I expect nothing less from the greatest meat in the universe.

Not just delicious, but a way of life.
Bacon is Happiness.
Try to say Bacon and not smile and feel good.
In fact the only time the word Bacon makes you feel sad is in the sentence "Sorry, We are out of Bacon."
So Bacon is Happiness.
Bacon is the solution to most any problem.
Bacon is Delicious in a way that can only be described as wonderful porky, sweet, smokey, salty goodness.
